Ingredients
- 1 cup cooked quinoa cooled completely
- 13 oz. chickpeas rinsed and drained
- 1/2 cup jarred roasted red peppers diced
- 1/4 cup red onion diced
- 1/4 cup fresh parsley chopped
- 2 Tbsp. fresh mint
- 2 Tbsp. olive oil
- 1 Tbsp. lemon juice
- 1/2 tsp ground cumin
- Salt to taste
- Black pepper to taste
Instructions

In small bowl, whisk together olive oil, lemon juice, cumin, salt and pepper. Taste and adjust as desired.

In large mixing bowl, combine cooked quinoa, chickpeas, roasted red peppers, red onion, parsley and mint.

Pour dressing over salad and toss gently until everything is well coated.

Serve immediately or refrigerate for 30 minutes to let the flavors meld.
