Ingredients

  • 1 cup cooked quinoa cooled completely
  • 13 oz. chickpeas rinsed and drained
  • 1/2 cup jarred roasted red peppers diced
  • 1/4 cup red onion diced
  • 1/4 cup fresh parsley chopped
  • 2 Tbsp. fresh mint
  • 2 Tbsp. olive oil
  • 1 Tbsp. lemon juice
  • 1/2 tsp ground cumin
  • Salt to taste
  • Black pepper to taste

Instructions

  • In small bowl, whisk together olive oil, lemon juice, cumin, salt and pepper. Taste and adjust as desired.
  • In large mixing bowl, combine cooked quinoa, chickpeas, roasted red peppers, red onion, parsley and mint.
  • Pour dressing over salad and toss gently until everything is well coated.
  • Serve immediately or refrigerate for 30 minutes to let the flavors meld.
