Ingredients

  • 3-1/4 cups almond flour
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • 1 cup almond milk
  • 1/2 cup maple syrup
  • 1/4 cup coconut oil melted
  • 2 tsp. vanilla extract
  • 1/2 cup fresh blueberries
  • 1 lemon zested

Instructions

  • Preheat oven to 350 degrees F and prepare loaf pan with cooking spray.
  • Combine all ingredients except for blueberries and lemon zest.
  • Gently fold in blueberries and half of lemon zest.
  • Pour batter into prepared loaf pan. Top with more blueberries.
  • Bake for 45-50 minutes or until toothpick comes out clean.
  • Top with fresh lemon zest before serving.
